On the last day of Fieracavalli, one of the most beloved events by the public concluded: the second edition of “Sapori di Razza,” a contest created to highlight culinary specialties at the fair influenced by the equestrian culture from around the world. The awards were presented by the beloved chef Alessandro Borghese, whom we interviewed:
“This year, the level of ‘Sapori di Razza’ has grown immensely. Anyone who thinks that in street food in general, and at Fieracavalli, there are only a few sandwiches, is mistaken. Here, you find high-quality, cooked, and flavorful food that truly celebrates regional and, why not, international cuisine. I also tasted the judged specialties, and I can say that the smash burger is truly of high quality: very similar to the typical one from the Mississippi and New Orleans area, and cooked with really good products. What can I say about pizza and mortadella… it brought me back to Rome, to my childhood when I used to get pizza and mortadella as a snack for school. A crispy and thin Roman pizza, quality mortadella for a simple and authentic flavor.”
