Opened in 1909 and awarded the title of ‘Typical Restaurant’ by the Municipality of Verona, the Osteria Caffè Monte Baldo began as a dairy at the end of the 19th century and then became an osteria, with a restaurant on the ground floor and the upper floor reserved for gambling, card and dice games. In the 1960s, the osteria became a bar and café, changing its name to Caffè Monte Baldo. But it is thanks to the intuition and love of tradition of Gianni Vesentini, an innkeeper from Verona who invests his work with great passion and attention, that the café returns to its origins, retaining the characteristics of a historic shop, becoming Osteria Monte Baldo.
A historic osteria in the heart of Verona that, just as in the past, offers typical dishes of Veronese cuisine and the inimitable canapés that made the history of the city of Verona with the Vesentini family.
For his participation in the Fieracavalli competition Sapori di Razza Città di Verona 2022, chef Manuel Orlandi and osteria owner Simone Visentini propose ‘In viaggio con i sapori’.
Homemade Amarone della Valpolicella pasta tortelli stuffed with wild boar. The tortelli are accompanied by pumpkin cream, a fondue of Cimbro cheese aged in chestnut leaves, Lessinia chestnuts, Tonka beans from Brazil and currant coulis enhanced by a Verona celery and pumpkin fondue.
The idea behind the dish is to unite local Veronese products (Cimbrian cheese, Lessinia chestnuts, Amarone della Valpolicella, Verona celery) in an ideal gastronomic embrace with Tonka Bean from Brazil to represent the theme of travel and the rediscovered internationality of Fieracavalli after the COVID years.
The dish is ‘sustainable’ because it is artisanal, the result of the work of a qualified pasta maker, based on the presence of many zero-kilometre ingredients and enhanced by a tasty ‘recovered’ cooking sauce, with the re-use of pumpkin and celeriac peels.
